HEARTS OF ARTICHOKE WITH GARLIC, OLIVE OIL, AND PARSLEY
COMPONENTS
3 tablespoons of olive oil
4 big garlic cloves, minced
2 tablespoons of minced Italian parsley
2 packages (8 ounces each) of thawed frozen artichoke hearts
PREPARATION
Warm oil in a thick large frying pan on medium heat. Incorporate garlic and 1 tablespoon of parsley; mix for 30 seconds. Incorporate artichokes and mix to cover. Cover the skillet; cook on low heat until the artichokes become tender, approximately 12 minutes. Remove the lid; cook until the juices become thicker and coat the artichokes, stirring now and then, for approximately 2 minutes. Add salt and pepper for seasoning. Move to bowl; top with the remaining 1 tablespoon of parsley.
